Vegan Falafel Pita Recipe

    Ingredients

    • Chickpeas (3 cans – 19oz each)
    • 8 oz diced onion
    • ½ bunch Cilantro chopped (17g)
    • 1 tbsp Coriander (6g)
    • 4 tsp Cumin (4g)
    • ½ teaspoon Cayenne (1g)
    • 1 tbsp Minced Garlic (9g)
    • 2 limes (peel +juice) 108g


    Instructions

    1. Process chickpeas in food processor till finely ground, place in large bowl
    2. Add onion, cumin, coriander, garlic, and lime juice and mix it well
    3. Form small balls and fry them


    Cashew Sour Cream
    Ingredients

    • ½ cup raw cashews (74g)
    • 2 tsp miso (24g)
    • 1 lemon -juice (60g)
    • ½ cup water
    • Dash of nutmeg (0.3 g)
    • Salt and pepper to taste


    Instructions

    1. Soak the cashew in the water for 1 hour
    2. Strain cashews, set aside water
    3. In a blender add soaked cashews with water, miso, lemon juice and half of the water from the soaked cashews
    4. Blend it, and while blender still on, slowly add remaining water.
    5. Add nutmeg, salt, and pepper
    6. Set aside


    Pico de Gallo
    Ingredients

    • 1 Jalapeno small diced (40g)
    • 1 Tomatoes small diced (192g)
    • ½ onion small diced (70g)
    • 1 tablespoon green onion small chopped (6g)
    • 1 tbsp fresh Cilantro small chopped (6g)
    • 1 lime -zest and juice (54g)
    • 10 ml Olive oil
    • 1 teaspoon Garlic powder (5g)
    • Salt and pepper to taste


    Instructions: Combine them all together and set aside

    Pickled Onion
    Ingredients

    • 2 Red Onion round sliced (600g)
    • 2 Bay leaves (0.5g)
    • 3 whole Cloves (0.2g)
    • 5 Pepper corns (0.3g)
    • 1 Dry chili (0.7g)
    • 1 cup White vinegar (8oz)
    • 2 tbsp sugar (26g)


    Instructions

    1. Add everything but the onions in a pot – bring it to boil.
    2. Add the onions in, turn heat down and simmer for 30 seconds
    3. Remove from heat and let it cool completely
    4. Strain onion and store in the fridge


    *The pickling brine can be re-used a couple more times if wanted – make sure to store in the fridge.

    Warm pita in the oven and assemble the pita as wanted.
