Crispy Skinned Roasted Chicken Recipe

Glazed Sweet Potato
Ingredients- 2.5 lb Sweet potato 1 ½ inch Diced
- brown sugar (12g)
- 2 orange (juice and zest) 280g
- 2 tbsp of butter 50g
Instructions- Preheat oven to 350F
- Arrange potatoes in a single layer in 2 lightly greased 13x9-inch baking dishes
- Stir together sugar, orange juice, butter, salt and pepper to taste
- Pour over potatoes. Cover with aluminum foil.
- Bake for about 45 minutes
- Uncover and bake 5 more minutes or until glaze becomes syrupy
Crispy Skinned Chicken
Ingredients- 4 breasts (6oz each)
Instructions- Heat a saucepan with preferable oil.
- Season chicken (both sides) with salt and pepper
- Place chicken skin down, and cook till the skin has a dark caramel colour, flip the chicken and cook the other side
- Finish the chicken in a pre-heated oven for about 20 minutes
Whiskey Bacon Sauce
Ingredients- 100 g Bacon diced
- 30 ml Bourbon
- 150 ml Cream
- 150 ml Demi
- 80 g Onion small diced
Instructions- Preheat saucepan, add bacon to it. No need to use oil, bacon will release fat, you can start cooking bacon when pan is still not hot.
- When bacon is ¾ cooked, add onion. Cook till soft
- Add whiskey – reduce by 1/2
- Add cream and demi reduce it till sauce consistency
Garlic Mushrooms
Ingredients- 320 g Mushroom
- 10g Garlic
- 5 g Thyme
- 100 g butter
Instructions- Heat butter in a saucepan
- Add garlic and cook till golden. Add mushrooms and thyme.
- Put a lid on, cook on low till done. 5 – 10 minutes.
