Crispy skinned roasted free run chicken breast with whisky bacon sauce, glazed sweet potato, bacon, thyme and garlic mushrooms.

    Crispy Skinned Roasted Chicken Recipe

    • Glazed Sweet Potato

      • 2.5 lb Sweet potato 1 ½ inch Diced
      • brown sugar (12g)
      • 2 orange (juice and zest) 280g
      • 2 tbsp of butter 50g


      1. Preheat oven to 350F
      2. Arrange potatoes in a single layer in 2 lightly greased 13x9-inch baking dishes
      3. Stir together sugar, orange juice, butter, salt and pepper to taste
      4. Pour over potatoes. Cover with aluminum foil.
      5. Bake for about 45 minutes
      6. Uncover and bake 5 more minutes or until glaze becomes syrupy

      Crispy Skinned Chicken

      • 4 breasts (6oz each)


      1. Heat a saucepan with preferable oil.
      2. Season chicken (both sides) with salt and pepper
      3. Place chicken skin down, and cook till the skin has a dark caramel colour, flip the chicken and cook the other side
      4. Finish the chicken in a pre-heated oven for about 20 minutes

      Whiskey Bacon Sauce

      • 100 g Bacon diced
      • 30 ml Bourbon
      • 150 ml Cream
      • 150 ml Demi
      • 80 g Onion small diced


      1. Preheat saucepan, add bacon to it. No need to use oil, bacon will release fat, you can start cooking bacon when pan is still not hot.
      2. When bacon is ¾ cooked, add onion. Cook till soft
      3. Add whiskey – reduce by 1/2
      4. Add cream and demi reduce it till sauce consistency

      Garlic Mushrooms

      • 320 g Mushroom
      • 10g Garlic
      • 5 g Thyme
      • 100 g butter


      1. Heat butter in a saucepan
      2. Add garlic and cook till golden. Add mushrooms and thyme.
      3. Put a lid on, cook on low till done. 5 – 10 minutes.
