Creamy Vegetable & Rice Bake Recipe

Ingredients
- 2 carrots diced (200g)
- 1 zucchini diced (412g)
- 1 potato diced (330g)
- 1/2 cup pumpkin diced (50g)
- 1 onion diced (330g)
- 1 sweet potato diced (700g)
- 3 squash quartered (2000g)
- 150ml 36% cream
- 2 tbs butter (40g)
- 1 cup cheese shredded (100g) – parmesan mix
- 1 cup water
- 120g dry rice
- 1 tsp garlic minced (4g)
- Salt and pepper to taste
- Fresh thyme (2g)
Instructions- Preheat oven to 350F.
- Add all vegetables to a nonstick baking dish
- Add cream, butter, water, thyme, salt and pepper and rice to the baking dish, and mix well.
- Cook for 30 to 45 minutes. Sprinkle cheese over the top and cook for a further 10 minutes, or until golden brown.
- Stand for approximately 10 minutes to slightly cool and allow liquid to thicken.
