    Creamy Vegetable & Rice Bake Recipe

    • Ingredients

      • 2 carrots diced (200g)
      • 1 zucchini diced (412g)
      • 1 potato diced (330g)
      • 1/2 cup pumpkin diced (50g)
      • 1 onion diced (330g)
      • 1 sweet potato diced (700g)
      • 3 squash quartered (2000g)
      • 150ml 36% cream
      • 2 tbs butter (40g)
      • 1 cup cheese shredded (100g) – parmesan mix
      • 1 cup water
      • 120g dry rice
      • 1 tsp garlic minced (4g)
      • Salt and pepper to taste
      • Fresh thyme (2g)


      1. Preheat oven to 350F.
      2. Add all vegetables to a nonstick baking dish
      3. Add cream, butter, water, thyme, salt and pepper and rice to the baking dish, and mix well.
      4. Cook for 30 to 45 minutes. Sprinkle cheese over the top and cook for a further 10 minutes, or until golden brown.
      5. Stand for approximately 10 minutes to slightly cool and allow liquid to thicken.
